- 500 grams (1 pound) of fresh spinach rinsed and chopped
- 500 grams (1 pound) of fresh chicory or other leaf vegetable rinsed and chopped
- 5 tablespoons of chopped dill
- 6 spring onions roughly chopped
- 1 leek
- 6 zucchini flowers chopped
- 250 grams (0.55 pounds) crumbled feta cheese
- 1/3 cup of olive oil
- 2 eggs
- salt and pepper
- For the mush:
- 1 1/2 cup of water
- 1 egg
- 150 – 200 grams (0.44 pounds) of corn meal
Mpatsaria comes from Epirus region, famous for different kinds of delicious pies. This recipe combines vegetables, feta cheese and a mush instead of a dough. It is a light and healthy pie. Back in those days, life was very difficult. The housewives combined simple but tasty ingredients that were also cheap to feed their families. Let’s make this simple pie which will not let you down.. Enjoy it with the people you love most.
Wash and chop all the vegetables.
Pour water in a heavy pot and bring to a boil. Place the leaf vegetables for 5 minutes and drain.
Heat the olive oil in the heavy pot. Sauté the spring onions and the leek until tender. Add the zucchini flowers and the dill for 2 minutes. Stir in the spinach and the chicory and cook for another 5 minutes. Season with salt and pepper.
Remove form the heat and set aside the mixture to cool a little bit.
In a large bowl combine together the eggs and the feta and add them in the vegetable mixture.
In another bowl mix together the egg, the corn meal and the water. The mush should not be very thick.
Use a round pan (32 cm or 12.6 in). Place a baking sheet. Add half of the corn meal mixture and spread it. Then place the vegetable mixture in an even layer and press with a spatula to flatten. Then finish with the rest corn meal mixture on top and spread again.
Bake in the oven for 40 minutes at 200 0 C (392 0 F).
The corn meal gives a fantastic golden yellow color to the pie!
