- For the cake:
- 1 ½ cup crushed walnuts in a food processor
- 1 cup of breadcrumbs
- 5 large eggs
- 1 cup of sugar
- 1 tablespoon of cinnamon powder
- zest and juice of 1 orange
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- shot of cognac or brandy
- For the syrup:
- 3 ½ cups of water
- 2 ½ cups of sugar
- 2 tablespoons of lemon juice
- orange rind
Karidopita is a very popular Greek dessert. It’s a “must” for all the tourists who visit our country. Walnut cake is bathed in syrup. The result is soft and the color is brown. I’m very sure that everyone will be satisfied once you tasted it.
Separate the yolks from egg whites. In a large bowl beat together the egg yolks and the sugar until it becomes creamy.
Add the orange juice and the zest plus the baking powder. Dissolve the baking soda in the brandy or cognac and add it too.
In another bowl mix together the crushed walnuts, the breadcrumbs, the cinnamon and combine them within the first mixture.
Beat the egg whites until stiff. Use a table spoon and add it little by little to the egg-walnut mixture.
Use a baking sheet for the baking pan (32 cm – 12.5’’). Bake in the oven for 45 minutes at 180 0 C (355 0 F).
In a saucepan pour the water and the sugar. Add the orange rind and the 2 tablespoons of lemon juice. Bring to a boil and let it for 5 minutes. Discard the orange rind.
Pour the hot syrup over the cooled cake and let it for a few hours until the syrup has been absorbed.
Enjoy it plain or with ice-cream, sour cream or even yogurt.
